BBQ Roasted Potato Salad with Bacon Bits & Onions

Wine pairing – Andrew Peace Masterpeace Pinot Grigio 2024 (12%) 

Ingredients:

  • 1 kg baby potatoes (halved)
  • 2 tbsp olive oil
  • 150g smoked bacon (4 rashers)
  • 1 small red onion (finely diced)
  • 2 spring onions (sliced)
  • 4 tbsp mayonnaise
  • 2 tbsp BBQ sauce
  • 1 tsp smoked paprika (optional)
  • Salt & pepper
  • Chopped parsley (optional)

Instructions:

  1. Preheat your BBQ (or oven) to medium-high.
  2. Toss halved baby potatoes in olive oil, salt, pepper, and a pinch of smoked paprika.
  3. Grill or roast the potatoes in a BBQ-safe tray or directly on a veggie grill basket for about 25–30 minutes, turning occasionally until golden and crispy.
  4. While potatoes are cooking, fry the bacon until crispy and chop into bits.
  5. In a bowl, mix mayonnaise, BBQ sauce, smoked paprika, salt & pepper.
  6. Once potatoes are cooked, let them cool slightly, then toss with the dressing, red onion, spring onions, and bacon bits.

Garnish with parsley and serve warm or at room temp.
