BBQ Roasted Potato Salad with Bacon Bits & Onions

Ingredients:
- 1 kg baby potatoes (halved)
- 2 tbsp olive oil
- 150g smoked bacon (4 rashers)
- 1 small red onion (finely diced)
- 2 spring onions (sliced)
- 4 tbsp mayonnaise
- 2 tbsp BBQ sauce
- 1 tsp smoked paprika (optional)
- Salt & pepper
- Chopped parsley (optional)
Instructions:
- Preheat your BBQ (or oven) to medium-high.
- Toss halved baby potatoes in olive oil, salt, pepper, and a pinch of smoked paprika.
- Grill or roast the potatoes in a BBQ-safe tray or directly on a veggie grill basket for about 25–30 minutes, turning occasionally until golden and crispy.
- While potatoes are cooking, fry the bacon until crispy and chop into bits.
- In a bowl, mix mayonnaise, BBQ sauce, smoked paprika, salt & pepper.
- Once potatoes are cooked, let them cool slightly, then toss with the dressing, red onion, spring onions, and bacon bits.
Garnish with parsley and serve warm or at room temp.
